The regulations for the reopening of hotels and restaurants in Peru between the months of July and August 2020 have recently been published. This will allow all hotels categorized from 1 to 5 stars and restaurants that comply with the established sanitary protocol may restart their activities attending the public. In the case of restaurants, only the “delivery” service or take-away food will be allowed.

The most outstanding aspects of the Sanitary Protocol  towards COVID-19 for categorized hotels include, among others, establishing responsibilities and preventive sanitary measures that are mandatory for staff to comply with, sanitary processes for interaction with clients (e.g. in reception, common areas, food service) and cleaning and disinfection procedures for each area of the hotel.

The hotels that restart their services must implement their surveillance, prevention and control plan for COVID-19 at work according to the guidelines of the Ministerial Resolution No. 239-2020-MINSA Technical Document: “Guidelines for health surveillance of workers at risk of exposure to COVID-19 ”, and implement the protocol. It is important to highlight that the protocol establishes a frame of reference that will facilitate the supervision of hotels to ensure that they comply with these sanitary regulations.

At the same time, the Sanitary Protocol towards COVID-19 for restaurants and related businesses has been published, with the aim that they can restart their activities thanks to the “delivery” and “take away” services. It establishes preventive measures to protect the health of consumers, workers and suppliers against the risk of getting the COVID-19. In accordance with this protocol all restaurants, cafeterias, pizzerias, confectioneries, patisseries, fast food lounges, soda fountains, among other establishments may operate, as long as they comply with the sanitary regulations.

The restaurants may receive meal orders by phone, What´s app or mobile application, not in person, as the premises must be closed to the public and only the production, dispatch, billing and delivery areas will be operating.

In this sanitary protocol for restaurants and related businesses, it is established that the restaurant must have its own home-delivery service, which means that the delivery service must be carried out by staff from the same restaurant, given that at the moment the applications of delivery will not be allowed.

All operational, administrative, delivery and external personnel must have protective equipment that includes gloves, glasses and a mask, depending on their work, even gloves and masks must be changed every four hours, as necessary. Before starting their work, the temperature of the personnel must be measured and each one must disinfect their clothing and shoes, even each employee must have two changes of clothing per day. In the restaurant facilities, prior environmental sanitation must be carried out and it is required that they have cleaning products and a proper water supply.

It is important to highlight that all the businesses authorized for the first phase of reactivation must comply with the protocol approved in the Ministerial Resolution No. 142-2020-PRODUCE, as well as with the “Guidelines for health surveillance of workers at risk of exposure to COVID-19”.

WAYKI TREK considers that these protocols are very complete and have the necessary provisions to allow customer service in a safe and reliable way. We believe that the sanitary control measures that will be put into practice will allow our international travelers and national visitors to feel safe and enjoy the delicious cuisine of Peru, and the comfortable facilities and the quality of the hotels that comply with the established standards.
